Quick & Easy Stir Fry
This is probably my favorite dish to make. It's so easy, and full of flavor, it's a family favorite here. This dish can be made by itself, or with chicken or beef stir fry, so it's extremely versatile. I often make this dish for lunch, when I'm craving something salty. Here's what you need:
This is for each person
~ 1/2 cup of Instant white rice. (you can use other types of rice, instant, just makes it very quick to make.)
~ 1/2 cup chopped Green Pepper
~ 1/2 cup chopped sweet onion
~ 1/2 cup chopped baby bella or Shitake Mushrooms
In a smal pan, prepare rice as directed on box. In a separate pan stir in 2 tablespoons oil oil with all the vegetables, cook until tender (on high for about 8 minutes, contantly stirring).
Once rice is done, season with a single pat of butter and lemon pepper seasoning instead of salt for a healthier option. place rice onto plate, and top with vegetables. Enjoy!
Since rice is one of our stockpile items, this makes for a very budget friendly dish, especially when vegetables are purchased when they are on sale.
