Pumpkin Spice Pudding? @KraftFoods

I had to make a trip to the grocery store the other day, for a few necessities.  You know, milk, cheese, lunch meats, etc.  Well, I passed by a small display of Jell-O puddings.  I don't really know what made me take a second look, but I did.

I found this, Jell-O Pudding, Pumpkin Spice, a Seasonal release flavor.  I don't remember once seeing this anywhere.  I have not come across this anywhere online, no one was talking about this, nothing.

My husband likes to make fun of and says that during the months of October, November and December, I generally turn a slight orange color, because of my consumption of Pumpkin. Pumpkin everything. Pumpkin smoothies. Pumpkin pies. Pumpkin coffee. Pumpkin Skin cleanser, etc.

Okay, I will admit, I was curious.  Curious for a few reasons.  The number one being, why didn't I know about this?  Why didn't I come across this online?  I am one of those people that usually have a new flavor or gadget before most of my friends.  Then, of course everyone starts asking where did I find that..

Pumpkin Spice Pudding.  Sounds like it could really go either way, you know, really great tasting or a little funky tasting.  Needless to say, the first batch that I made, is long gone.  It's just enough pumpkin flavor to know that what you're eating is indeed pumpkin, it's sweet enough to think that you're really indulging, and just the right amount of creamy.

Seasonal Release. This phrase scares me. I find something new, and it's only available for a short time, which means that I will have to run to the store, and scoop up another 10 to 15 boxes, so I can have this in June when the craving strikes.

Having tried this exotic flavor of Jell-O Pudding, makes the idea wheel in my head do a little churning.  I'm thinking that I may be able to figure out a way to make ALL my Christmas desserts out of Jell-O this year.  hmmmm....  Could I really?  We'll see!

Sounds delish! I'll have to check my store, I don't recall ever seeing this either. I'd love to see you make all your desserts out of Jell-O pudding too!

I saw some comments from 2007 about this last week when I was looking for a pumpkin custard recipe (someone gave me a can of Libby's Easy Pumpkin Pie Mix.) This is what I ended up making:

PUMPKIN PUDDING
1 (30-ounce) can of Libby's Easy Pumpkin Pie Mix
1 (12-ounce) can of Evaporated Milk
1 (5.1-ounce box—6 serving size) box of Jello Instant Vanilla Pudding Mix
Whipped Cream (optional)

In a 2-quart batter bowl or mixing bowl, whisk together canned pumpkin pie mix and evaporated milk. Whisk in dry instant pudding mix until all ingredients are well-combined. Place plastic wrap on surface of pudding to prevent a skin from forming. Chill thoroughly, preferably overnight. Spoon into a pretty serving bowl or several parfait glasses or bowls. Top with whipped cream if desired.

6-12 servings

Here's one with canned "100% pure" pumpkin, which is what I would normally buy myself:
