A New Take on Chicken Cordon Bleu

 
I have completely fallen in love with my KitchenAid Stand Mixer over the last several months, so much so, that the motor that spins the attachments has actually died.  ( I called KitchenAid, and am awaiting the arrival of a new replacement mixer!)
 
 
The other day, I began grinding some frozen chicken to attempt an idea I had in my head last week. 

 
This was roughly 3 boneless skinless chicken breasts. ( which made 10 of the "Meatballs")
 
Pre heat oven to 375 degrees.  After grinding all the chicken up, I didn't want any spices to over take the taste of the chicken, so I mixed nothing with the ground up chicken.  Not even eggs.  I was a little afraid at first the by not adding any eggs, these would fall apart, but they seemed to hold their shape very well!
 
 
I then cut several pieces of Cooked ham, and a block of Baby Swiss Cheese.  Grab enough ground chicken to make a decent size "meatball", and flatten out in the palm of your hand. 
 
 
place approximately a half slice of ham onto the flatten ground chicken, then a piece of Swiss Cheese.  You will then want to slowly work the ground chicken into a ball, making sure that all of the ham and cheese have been covered by the chicken. 
 
 
Once you have made up all the chicken, gently roll each once in Italian Seasoned Bread Crumbs. 
 
 
place into a baking dish, making sure to keep the separated from each other. 
 
 
Place into pre heated oven for approximately 35 - 45 minutes, uncovered. 
 
 
Serve warm.  
 
These were incredibly easy to make, and in no time at all, the prep work was done.  I foresee making trays of these up, and freezing for make ahead dinners.  Well maybe once I get my new KitchenAid mixer in! 
 
I was also thinking that maybe placing these into a crockpot in a cream of chicken soup mix, or possibly making smaller portions for the crockpot.  How great would these be for a party?!
