Homemade Peppermint Patty Cookies!

 
 
Peppermint Patty Cookies  (no bake!)
 
 
I made these the other day, and couldn't believe just how closely they tasted to the real thing!  ( I also couldn't believe just how incredibly easy these were to make!)
 
Makes approx. 3 dozen
 
Ingredients
 
8 oz package Philadelphia Cream Cheese
3 1/2 cups of Confectioner's Sugar
2 Tablespoons Peppermint Flavoring
Flour ( approx 1 cup, give or take a few tablesoons)
Dark Chocolate chips for melting
 
 
 
In an electric mixer, add the first 3 ingredients.  Once they are fully combined, add flour by the heaping spoonful, until mixture begins to form a dough like consistancy. 
 
(You want to be able to roll the mixture in your hands to form small balls without it being sticky.)
 
Once the desired consistancy is reached, scoop a small amount into your hands and roll into balls and place one at a time onto a nonstick surface.  ( I use disposable aluminium pans.) and flatten out to about a half inch thickness. 
 
Because these have a tendancy to crack, you may want to roll only a couple of them at once before you flatten.  I found that using a slightly greased bottom of a glass works well.
 
Once all the dough have been molded into patties, melt your dark chocolate chips either on stove top or in a bag in a microwave.  If you're melting it in a microwave, be sure to stir often. 
 
**If you're melting your chips on the stove top, here's a great mess free tip:  Heat a large saucepan of water, and place your chips into a ziploc bag place the bag directly into the water!  No need for a double boiler, and the clean up is super easy!  Plus the Chocolate won't dry out as quickly!  Dry bag before cutting the tip to avoid getting any drips of water on your cookies! 
 
Cut a small tip off the corner of the bag, and begin drizzling over the top of each patty.  Here's what you'll end up with:
 
 
Place in fridge, and serve cold. 
 
Because these contain cream cheese, remember to store in the fridge.  These can be made several days in advance of your next holiday party.
