The Most Incredible, Fluffiest Gluten Free Dinner Rolls! (A Must Pin Recipe!)

More and more of my friends and family are being told by their doctors they need to eliminate Gluten from their diets.  This got my creative juices flowing.  I have bought a few different brands of Gluten free flours, and starches, and have pretty much determined that Bob's Red Mill line of products has to be some of the tastiest around.  

When my friend told me that she spent $20 plus dollars on a rock hard loaf of bread, and a bag of Pizelles, my jaw hit the floor.  The  bread was not something that I would ever consider making a sandwich with.  If you toasted it, it wasn't too bad, but again, I reiterate... you wouldn't want to make a sandwich with this.  

I've tried out some recipes that I have found online, and nothing really has sparked my taste buds.  Nothing. 

After a little reasearch, and  several batches made, I came up with a Gluten Free Dinner Roll, that everyone in the house will want more of!

White, Fluffy, and full of flavor, these were a hit with everyone that tried them!  Best of all, they were extremely easy to make. 

Here's what you'll need:

♦ 2 tbsp of Active Dry Yeast (if you have the small packets, it's roughly 2 of those)
♦ 1 Cup Hot Water + 2 tbsp Hot Water
♦ 1/3 Cup Whole Milk
♦ 1 Egg
♦ 1/4 Cup Sugar
♦ 1 tsp Salt
♦ 1 tsp Baking Powder
♦ 3 tbsp Xanthan Gum
♦ 1 and 1/4 Cup White Rice Flour
♦ 1 Cup Brown Rice Flour
♦ 3/4 Cup Potato Starch
♦ 1/3 Cup Tapioca Starch or Tapioca Flour



◘ In your mixing bowl, you'll want to add all the hot water, and dry yeast, and let set for about 5 minutes, allowing the yeast to begin to activate.  



◘  While waiting for yeast to begin to activate, in a small bowl, add egg and milk.  Whisk until they are thoroughly combined.



◘ In another bowl, add all of your dry ingredients.  Mix with a fork, until all the dry ingredients are well combined.  


◘ Add Flour mixture and Egg mixture to your mixer, and mix with a dough hook until you have a dough like consistency, approximately 5 minutes.  


◘  Though this mixture isn't like a normal bread dough, you should still be able to form into small rolls.  The dough shouldn't be too sticky.  


◘ Once all your rolls have been made and placed onto a cookie sheet, cover rolls with a damp towel, and let sit for about 2 hours.  They will not rise as much as a normal dough, but they will slightly rise.

◘ Place into a 425 degree oven and bake for 9 - 12 minutes.


Serve warm and enjoy the flavor!  Yes, these, I would defintely make a sandwich with!
