Easy Pumpkin Fudge!
I love this time of year for one reason. Pumpkin. Yes, pumpkin. My husband swears that I will soon turn into a pumpkin if I continue to consume as much pumpkin as I do. After four failed attempts at trying to make a tasty pumpkin fudge, we finally have a winner. The best part of this recipe was it was super simple, and with a hint of pumpkin flavor, it wasn't too sweet.
Here's what you'll need:
5 cups of Confectioner's Sugar
1/2 cup butter
1/2 teaspoon vanilla extract
2/3 cups unsweetened cocoa
1/4 cup milk
1 Tablespoon Pumpkin Pie Spice
In a medium sauce pan, combine butter, milk, and vanilla. Heat mixture until butter is completely melted.
in a mixing bowl, combine confecvtioner's sugar, cocoa powder, and pumpkin pie spice.
Add your melted butter mixture to your dry ingredients, and blend together. ( You can use an electric mixture to ensure you don't have any clumps.)
Once all ingredients are thoroughly combined, pour into a lined 8 x 8 pan. I use parchment paper for lining. You'll want to make sure you have your pan lined ahead of time. Place in fridge for a few hours to harden.
Once the fudge has fully set, remove from pan and cut into bite size pieces. Perfect for an after Thanksgiving Day dinner treat!
Want to make different versions? Replace the pumpkin pie spice with cinnamon or for the bold lovers, try a 1 teaspoon of cayan pepper!
