Easy Menu Monday! - Grilled Fajitas




Grilled Fajitas
We are in search of some healthier recipes to help bring down some health numbers that my husband has.  So today's easy menu is Grilled Fajitas.  Here's what I'll be doing: (*note, the picture is not from my dish!)

This is the amount to be used for 1 Fajita.  If making 2, you'll want to make sure you double the recipe. 

1 teaspoon olive oil

2 ounces raw chicken breast, pork or beef tenderloin

1/2 cup onion, sliced

1 cup green and red bell pepper, chopped add to shopping list

1/2 cup carrots, sliced

1 cloves garlic

1 corn tortilla

Optional:  Sprinkle freshly shredded Mozzerella Cheese into Fajita. 

Heat the olive oil in a skillet. Add the chicken, pork or beef, onion, peppers, carrots and garlic. Saute until cooked through. place to side, Put corn tortilla onto skillet for about 30 seconds to warm.  Place sauted veggies,  onto tortilla, and serve.

CARBOHYDRATES - 33 G
TOTAL SUGARS - 10 G

PROTEIN - 17 G

All in all, I think this will be a pretty good dinner for tonight.
