Easy Menu Monday
Unfortunately I don't have a picture of this recipe. As soon as I can make this dish, I will add a picture to this recipe. It's an easy 1-2-3 recipe that you through into the crockpot, and forget about. Working full time, the crock pot had quickly become my best friend! It's so nice to come home from work, and smell dinner all ready and waiting! Today's Recipe:
Chicken PotLESS Pie
Normally my girls are not picky eaters by any account. However there isn't one person in our house, except for myself that likes the pieshell on chicken pot pie. So I came up with this dish.
Here's what you'll need:
~Boneless / Skinless Chicken Tenders - cut into bite size pieces.
~2 Cans of Cream of Potato Soup ( mix can of soup with half can of water) You'll want it slightly thicker than soup. (Coupon available Now)
~ 2 cups celery cut up
~ 2 cups carrots washed and sliced (Coupon available Now)
~1 package of Extra wide egg noodles (Coupon available Now)
Salt & Pepper to taste
Add first four ingredients to crock pot, turn on medium. Let cook throughout the day. 15 to 20 minutes before ready to eat, add package of egg noodles. Once the noodles have cooked, you're ready to serve. I usually serve with the Pillsbury Bisquits. The great thing about this recipe is you can add any vegetable that you like. Peas, corn, mushrooms... They pretty much all work with this recipe.
*If you want your broth to be slightly thicker, you can also take some of it out of the crockpot, place in a small sauce pan on stove top, add 1to 2 teaspoons of flour, and stir constantly, until thick, add back to crockpot, and stir.
♦ With Sales, this meal will normally run my family about $2.15 per person. Many items can be stockpiled, which is even better when items can be found free or nearly free!
