Easy Pizza Pillows ~ Perfect for any occassion!

I have been thinking about doing these for a few weeks now.  Last night I decided I would give them a try, with just items we had on hand.

Easy?  Absolutely.  This was a type of dish that would be great to teach the little ones to do.

First what you'll need:

Pepperoni, cut into Fourths.  ( I did this to make biting into them would be easy.)
String cheese ( I would have preferred to have fresh mozzarella balls.)
Grands Biscuits
Basil
Olive Oil
Minced Garlic
Sauce for dipping

You'll need to split each biscuit in half.  So for each package of 8, you'll end up with 16 pillows.  Once you have them separated, flatten out each piece.

Layer each piece with a few slices of pepperoni, and a piece of mozzarella.

Begin by folding over one side of the biscuit.

You'll end up making an envelope of sorts.

Once you have all the sides folded over, gently roll the pillow between the palms of your hands, you want to create a ball like shape.

Place close together in a pan.  ( When they bake up, they'll be touching each other.)  Lightly drizzle olive oil over each of them.

Sprinkle a little basil and minced garlic over each of them.

Bake in oven at 350 degrees for about 15 minutes.

Serve warm with pizza sauce for dipping!

Like little pillows of pizza heaven!

The Most Raved About Appetizer!

Crispy.  Bite-sized. Bacon.

Each year, I try to do something new and different with bacon.  Thanksgiving brought Maple Bacon Cupcakes. Last year brought Chocolate Covered Bacon Strips.

This past Christmas brought something simple.  Bite-sized pieces of thick cut bacon.

I thought it would be a hit, I just didn't realize just how big a hit this would be.  2 pounds of bacon went in less than a single hour.

I got the idea for this when one night my husband and I were watching a television show about bacon.  There is a bar in Baltimore Maryland called "Bad Decisions", that offer "Beer & Bacon" night, which during the course of the night big huge bowls of cooked bacon are passed around, like bowls of peanuts.

There's really nothing to this.  Simply cut the bacon into bite sized pieces, and place into a frying pan.  Once it is cooked, drain and serve.

Yields

INGREDIENTS
· 16 medium figs, dried - about 8 ounces
· 1/2 cup port
· 1 tablespoon vinegar, balsamic
· 1/4 cup cheese, crumbled Gorgonzola - 2 ounces
· 1/4 cup cream cheese, reduced-fat - softened
· 1 teaspoon rosemary, fresh - chopped
· 2 ounces prosciutto - sliced and trimmed of fat
· pepper, black, coarsely ground - to taste

DIRECTIONS
1. Snip the stem off each fig and make a crisscross cut two-thirds of the way down to partially open the fig. Trim the base of each fig so it will sit upright when finished.

2. Place the figs, port and vinegar in a small saucepan; cook, uncovered, over low heat, shaking the pan occasionally, until the figs are plumped and softened and most of the liquid is reduced, 10 to 15 minutes. Set aside until cool enough to handle.

3. Meanwhile, combine Gorgonzola, cream cheese and rosemary in a small bowl; blend with a fork.

4. Cover and refrigerate until the figs are cooled.

5. Cut prosciutto into 1/4-inch-wide ribbons.

6. Using a teaspoon, melon baller or small spoon, place a dollop of cheese mixture in the opening of each fig.

7. Garnish each appetizer with a ribbon of prosciutto. Dust with a grinding of pepper.
