Easy Crockpot Tater Tot Chicken Dinner!


My husband found a recipe online a few weeks ago that was very similar to the dish pictured above.  I have been putting it off and putting it off for some time now.  Basically I did not want to make this dish.  The thought of soggy tater tots turned my stomach.  Now when I make tater tots for a side dish, I always end up cooking them waaay past the suggested cooking time, because well, I like crunchy tater tots.  

Well a girlfriend of mine, her husband saw the photo that my husband shared and that was it.  The men, well let's just say neither one of us was going to get any rest until we made this dish.  So earlier in the week we decided that we would get together for this dinner.  

I had my apprehensions.  To say the least.  I put this dish together in the crockpot yesterday morning, and let it cook all day.  Continually checking on this, because like I said, I just can't choke down soggy tater tots.  

5:00 pm, it was time to serve this dinner.  

It smelled wonderful.  Okay, I can admit when I am wrong.  This dish was incredible!  Tasty, flavorful, moist.  The tater tots turned to more of a shredded potato dish feel than tater tots.  

Would I make this again?  Will I put this dish into our rotation of weekly meals?  Absolutely!  In fact, I'm going to make a few variations of this to mix it up.  

Here's how to make this super easy dish!

Ingredients:

1 bag of Tater Tots
2 lbs of Boneless Skinless Chicken Breasts/Tenderloins cut into pieces
1/2 cup milk
2 cups of Sharp Cheddar Cheese, Shredded
non stick pan spray
1 lb Bacon, cooked (or you can use real bacon bits to save time)
Chopped Scallions
Salt & Pepper to taste

Directions:


Spray the inside with your non stick spray.  place a single layer of tater tots in the bottom.  Add a thin layer of bacon bits or cooked bacon pieces.  Next add a thin layer of cheddar cheese.  Lastly, add a single layer of your cut up chicken.  (Some people have made this dish using whole boneless skinless chicken breasts, however many said the next time they made this dish they would cut up the pieces into smaller portions.  

Continue to layer the crockpot until you have used your ingredients, making sure to use tater tots and cheddar cheese as your top layers.  

Cook on low for 6 - 8 hours.  Top with scallions when serving.
